After spending hours scouring recipe books and conducting tasting experiments, I've found the following flavor pairings all go well with Cauliflower. Click on any match to view its flavor matches.

  • Almond

    E.g. Moroccan spiced cauliflower and almond soup.A lovely creamy soup which combines roasted Moroccan spices like cardamom, cumin and corriander with the earthy flavours of cauliflower and the soft rounded nutty flavours of almonds.

  • Broccoli

    E.g. Steamed broccoli and cauliflower .Both of the vegetables are similar in texture and have a roundness to their flavours. However, whist broccoli exhibits undertones of bitter iron flavours, cauliflower is sweeter and milder. They're commonly steamed and served as sides to a roast with gravy and potatoes.

  • Cumin

    E.g. Aloo Gobi .I used to spend most of my school's summer holidays visiting my relatives in Pakistan which would always involve doing a round of visits to relatives houses and being welcomed with tons of great food.

    One dish I would always look forward to was my auntie's Aloo Gobi curry which is a traditional dish of fried cauliflower and potatoes spiced with cumin, ginger, tumeric and several other spices along with some serious amounts of oil. The flavor that stands out the most however, is the cumin whose brown roasted seeds cling to the other ingredients.

    The dish sort of became an annual tradition. No visit to aunties would be complete without the aloo gobi, a plate of chapati and a jug of homemade lemonade to wash it down. Great days.

  • Hazlenut

    E.g. Roasted Cauliflower, Hazelnut and Pomegranate Seed Salad.Many a child has been mentally scarred by the smell of over cooked boiled veg wafting around their corridors at lunch time. Cabbage was the worst, but cauliflower came a close second. Pale white mush, devoid of any taste.

    But forget all about that. Cauliflower can actually taste great if cooked correctly and with the right ingredients. One great pairing being with hazelnuts.

    Yotam Ottolenghi uses them both in a recipe your friends will fight for. First he roasts them together in oil until the cauliflower develops a lovely golden brown color. He then places them in a mixing bowl and adds cinnamon, ground allspice and sherry vinegar.

    But it's his last ingredient that makes it so different - fresh pomegranate seeds. Sprinkled on top to provide a little tartness and visual contrast.
